If you’re in Springfield, IL, and craving authentic southern comfort food, look no further than Aunt Lou’s Soul Food Kitchen! This new gem opened in July 2024, and I couldn’t wait to give it a try.

During my visits, I sampled a variety of dishes, and here are my top favorites:

  • 🍤 Shrimp and Grits – Creamy, flavorful, and perfectly cooked.

  • 🍗 Fried Chicken – Crispy on the outside, tender on the inside—classic comfort!

  • 🌿 Collard Greens – Seasoned to perfection with that homemade taste.

  • 🐟 Catfish – Golden-fried and absolutely delicious.

On my first visit, the mac and cheese was a little dry, but when I went back with my mom, I ran into the owner. After mentioning my experience, he whipped up a fresh, piping-hot batch free of charge. Talk about exceptional customer service!

How I Revived My Aunt Earline’s Sweet Potato Pie Recipe and Found a Taste of Heaven [VIDEO]

Growing up, nothing compared to my Aunt Earline’s Sweet Potato Pie. It was the highlight of every family gathering—a slice of pure love and tradition. When she passed away, I didn’t realize that her pie would become a memory, one I thought I’d never taste again.

That all changed when I reached out to her daughter and granddaughter for the recipe. Learning to make it myself was the best gift I could have given. Every time I bake one, it’s like reconnecting with my Aunt Earline and savoring a little piece of heaven.

Now, I want to share this joy with you. Instead of simply telling you how incredible this pie is, I’ll show you. Watch my step-by-step video tutorial and learn how to create a sweet potato pie that’s as close to perfection as it gets. Trust me—it’s a recipe you’ll treasure forever! 🍠🥧

Reciepe:

3 Medium Sweet Potatos (Boil for 1 hour to 90 minutes until soften)

3 Eggs (whip the eggs) 1 Tbs of Vanilla 1/2 Tbs Cinnamon 1/2 Tbs Nutmeg

1 Cup of Sugar 1 Can of Sweetened Condensed Milk (I use Eagle Brand)

1 Stick of Unsalted Butter (Room Temperature)

2 pie crust ( regular or deep dish depending on how thick you want your pie)

Step-by-Step Guide to Making the Perfect Sweet Potato Pie

1️⃣ Start by creaming together the butter and sugar until smooth and fluffy.
2️⃣ Add in the eggs, vanilla extract, ground cinnamon, and condensed milk. Mix well to combine.
3️⃣ Peel the boiled sweet potatoes and add them to the mixture one at a time. Blend thoroughly to ensure the mixture is smooth and to catch or eliminate any strings from the sweet potatoes. Nobody wants strings in their pie!
4️⃣ Pour the mixture into your prepared pie crust.
5️⃣ Bake at 350°F for 90 minutes:

  • For the first 45 minutes, bake uncovered to allow the pie to set.

  • Cover with aluminum foil for the last 45 minutes to prevent the crust from burning.

Let the pie cool before serving, and enjoy a slice of sweet, creamy heaven! 🥧✨

How a 67 Year Old Black Woman Succeeds in Working Out: My Mom's Weekly Fitness Routine [VIDEO]

My mom is a 67-year old retired work out queen! I was so inspired by her weekly fitness routine that I decided to shadow and film her so that I could share it with the world. I definitely want to be her when I grow up.

My mother has always enjoyed being active, but I think she took it to an all new level when she retired almost 13 years ago. This woman hula hoops for 20 minutes every morning to keep her core tight and goes on bike rides for 2-3 hours at a time. She literally spends an afternoon riding through parks, bike trails and even to neighboring towns. What?! Lol! Please know that we are not the same. I rode with her once and never joined her again. Bike riding is not my ministry. Lol!

She does pilates twice a week, and takes an aqua aerobics class twice a week. Whenever she is in the water like clockwork, she swims away from her class down to the diving board, and proceeds to do 400 pull ups! Yes, you read that right! But she would want me to tell you that she doesn’t do 400 all at one time. She does them in groups of 10 or 20. But still!!!! Who at 67 is doing 400 pull ups on anything. I am shocked and inspired all at the same time.

On the days that my mom does pilates she does 30 minutes on the elliptical machine followed by a 3 mile walk on the track. This is all before she even starts her 45 minute Pilates class. I told her she needs a hobby that doesn’t require her body to do it. Lol! I am happy that on the days she’s in the water she follows up with time in the sauna. It’s the only time she’s sitting and doing nothing. I was exhausted just filming everything she does.

My mom’s weekly schedule is consistent. She even walks in the park 3-4 days a week depending on how the weather is. The only time she has ever taken an extended break from her routine was during the pandemic when we were all at home and sheltered in place. But please know that she found other things to do at home to fill that void.

I have been wanting to share my mom’s fitness routine for quite awhile because I am super proud of her and I secretly think she is a unicorn. I also wanted her to see just how other people view her.

On May 21, 2022 I went live to interview Tik Tok Content Creator Morgan Johnson (( @knowthyself_1j44 on Tik Tok) I recently posted her Tik Tok video to my ⁣⁣Studio Q Facebook page and it garnered 1 million views in 24 hours. I’ve only had 2 other videos (@willsmith and @inayah ) do that in the history of my page just so you understand how rare that is for me to see on my timeline.

The #tiktok video of Morgan braiding her husband’s hair is such an inspiration. It’s abundantly clear that she didn’t allow her birth injury to keep her from greatness. Morgan reminds us all just how capable and amazing we can be despite any disability. What an Inspiration she is!⁣⁣

Quencie Interviews Singer/Songwriter and Owner of Anise Records - BETH

On March 1, 2022 I interviewed singer, songwriter and owner of Anise record label Beth Griffith Manley. She has sang background for the legendary and iconic Anita Baker and singer KEM. You may have seen her on season 16 of The Voice on Team John Legend and Kelly Clarkston or know her as the daughter of Motown royalty. Her dad was original funk brother pianist, Johnny Griffith and played on so many iconic Motown hits.

What had me most excited about this interview was that I got to ask Beth about being Whitney Houston’s body double in the movie Sparkle! We both share a deep love for Whitney so it was amazing to get a chance speaking about her in the interview.


BETH has a new single "Let Me Be" dropping March 22nd, and on April 15th a cover of Sade's Kiss of Life will be released. It is a collaboration with musician Blair Bryant, who is a prodigy and a musical director for NAJE'.  BETH's second album Get To Know Me will be dropping in June. 

BETH is just your typical black woman blazing trails. She’s the perfect person for me kick off Women’s history month and celebrate world compliment day cuz her journey has been more amazing.
